    a good one to make ahead since it tastes best if given a couple of days to blend.

    I have used lamb shanks or kangaroo instead of chicken.

    Even though you can use chicken fillets, the bones add to the richness of the gravy.


    List of Ingredients


    • 1 chicken cut into pieces
    • 1 tbs ground ginger
    • garlic
    • 1/2 tsp fenugreek seeds
    • 1 onion, sliced
    • curry powder (use a good one if possible)
    • 4 tbs coriander powder
    • 4 potatoes, roughly chopped
    • 3 tomatoes, roughly chopped
    • 3 cinnamon sticks
    • 2 tbs almonds (soaked and ground)
    • bay leaves and curry leaves
    • 1 tsp chilli powder


    Instructions


    1. Heat oil. Add cinnamon sticks, fenugreek seeds and bay/curry leaves. Add onion. Cook til brown.
    2. Add chicken pieces. Add tomato and garlic.
    3. Add ginger. Cover. Cook for 10 minutes. Add coriander powder and chili with 4-5 cups water. Cover and cook (medium heat)
    4. After 15 minutes add potatoes and salt. When potato is cooked add almond paste mixed with a little milk.
    5. Boil a few minutes then take off heat.
