    If you are like me and paint and colour hard boiled eggs for easter (yes I am latvian) and end up with too many that are broken and wonder how to use them, or need to eath them a day or so later, you can turn to indian recipes like this one to use up hard boiled eggs. Egg curry is also popular at curry nights as one of the options or can be a way top get protein into fussy kids who wont eat meat (they are not proper vegetarians if they are just fuss pots)

    List of Ingredients




    2 onions
    2 chillis (or as many as you like, deseeded unless you want superhot)
    1 tsp ground coriander
    1 tsp tumeric
    large tin (800g?) tomatoes
    6-12 hard boiled eggs (halved)

    Recipe



    Fry chopped onions and chillis. Add spices and stir unti fragrant.

    Add large tin of tomatoes and heat gently.

    When it is all cooked add in the halved eggs and just heat through

    Serve with Indian bread or rice or chop up and cook in jaffles (toasties)
