    Recipe Introduction


    This was before I knew any real Indian cooking, this was how my mum made curry. I have never seen or heard of a recipe like this anywhere else and my Indian friend ridiculed any thought it resembled Indian cooking in any way. It's yummy though. Sometimes mum mixed cooked chunks of meat or fish through this, or served them seperately with this as a sauce. I quite like it by itself over brown rice.


    List of Ingredients


    • 1 onion
    • 2 cloves garlic (optional)
    • 1 granny smith apple
    • 1 cup sultanas
    • juice of 1 lemon
    • 1/2-3/4 cup dessicated coconut
    • 1 tin tomatoes (about 400g)
    • stock cube (optional)
    • 1-2 tbs curry powder
    • bayleaf (optional)
    • pepper (optional)
    • sugar or honey to sweeten (if it gets too sour, depends on the quality of ingredients)
    • oil


    Instructions


    1. Soak dessicated coconut in the lemon juice. Heat oil and saute chopped onion and garlic. Add apple and stir over low heat until softens.
    2. Add in all ingredients, stir and simmer until flavours combine and sultanas are plump.
