    Banana Bread Pudding

    • 5 medium firm bananas, sliced
    • 4 cups bread cubes (raisin is good)
    • 1/2 tsp cinnamon
    • 1/2 tsp vanilla
    • 1/8 tsp nutmeg
    • 2 eggs, beaten
    • 1 3/4 cups skim milk
    • 1/2 cup firmly packed brown sugar


    Instructions


    1. Heat oven to 180C. Grease 10x6 inch baking dish.
    2. Place 2 cups bread cubes in greased dish, top with banana slices and then remaining bread cubes.
    3. In medium bowl combine brown sugar, cinnamon, nutmeg, vanilla, milk and eggs. Blend well.
    4. Pour over bread cubes. With back of spoon, press bread cubes down slightly. Let stand 10 minutes.
    5. Bake 45-50 minutes or until centre is set. Store leftovers in fridge (duh)
    6. Best served with icecream or yoghurt
