    Tony claims that this recipe is even better if you mix Kahlua or Baileys in with the expresso. If you have no expresso instant coffee is an Ok (not great) substitute.

    Tony sometimes uses jam or cinnamon or sliced berries between layers instead of chocolate. Tradition is just a starting point.


    List of Ingredients


    • 2 tubs of marscapone (500g altogether?)
    • 6 eggs
    • 1-2 packets Italian biscuits (will edit when I remember what they are called)
    • 4 cups strong expresso
    • lots of vanilla essence to taste (wattle-seed is ok instead)
    • castor sugar to taste (about 1/2 cup)
    • good quality dark chocolate grated or chopped thinly - we used Lindt Orange


    Instructions


    1. Beat yolks with half the sugar and whites with the other half of the sugar until yolks are pale and whites are stiff.
    2. Fold first one then the other through marscapone with the vanilla essence.
    3. Pour expresso into a shallow dish and dip the biscuits into expresso coating both sides.
    4. Lay biscuits flat in serving tray (or individual dishes) and spoon marscapone mixture over.
    5. Grate over the chocolate (or sprinkle) and make another layer of each continuing to layer until full.
    6. Finish with chocolate sprinkled on marscapone and place in refrigerator overnight for best flavour and texture to develop.
    7. Can be served (as I did) with sliced strawberries. Yum
