    serves 6 (2 each)- Bake the crusts in a hot oven until crunchy. Use as a snack with cream cheese or peanut butter or dip of your choice


    List of Ingredients


    • 12 slices wholemeal bread, crusts removed
    • 75g butter
    • paprika
    • 12 eggs (45g ones)
    • 3 spring onions, chopped
    • 1 cup grated swiss cheese


    Instructions


    1. Flatten both sides of bread with a rolling pin. Spread both sides with butter and press into muffin tins.
    2. Crack an egg into each and sprinkle with spring onion, cheese and paprika.
    3. Bake at 180C for 20 minutes or until set.
    4. Serve with cherry tomatoes halved and mixed with spring onion or basil.
