    Chilli Beef Pappadums with Mint Raita

    serves 2-4 as entree


    List of Ingredients


    • 20g ghee
    • 1 onion, chopped
    • 1 tsp chopped red chilli
    • 1 tsp ground cumin
    • pinch cinnamon
    • 250g beef mince
    • 2 tbs tomato paste
    • 2 tsp cornflour
    • 12 large pappadums
    • ghee (for shallow frying)
    • 1 cup natural yoghurt
    • 1/2 cucumber seeded and chopped
    • 2 tbs chopped mint


    Instructions


    1. Melt ghee in frypan and saute onion, chilli, cumin, cinnamon and mince until well browned.
    2. Mix cornflour to a paste with a little water. Dip pappadums in water to soften. Drain on absorbent paper.
    3. Place a tbs of filling in the centre of each pappadum. Brush the edges with cornflour paste and fold in half to enclose filling. Heat ghee in a frypan.
    4. Fry pappadums until golden. Drain on absorbent paper. Combine yoghurt, cucumber and mint together and serve as a sauce for pappadums.


    Final Comments


    can be served with coriander, mint or shaved ribbons of cucumber for garnish. Or with rocket dressed with a zesty vinaigrette
