    Crunchy Top Italian Tomatoes

    Recipe Introduction


    You will need the ingredients stated per person. If you have very very big serves for main and dessert, then make half serves per person, but normally one tomato (two halves) is a reasonable serve), garnish with green things like fresh basil or oregano, rocket or a bed of baby spinach tossed in a mix of red wine vinegar and extra virgin olive oil, or rub a piece of wood over bread with garlic, grill it and serve with that.


    List of Ingredients


    • 1 tomato, cut in half
    • 1 tbs breadcrumbs
    • 25g cheese (edam, gouda or cheddar is best), grated
    • 1 tsp chopped parsley
    • shake of dried oregano and pepper


    Instructions


    1. Grill tomato halves 2-3 minutes each side.
    2. Combine all other ingredients in a small bowl and press together until it forms a crumbly topping.
    3. Top each tomato with cheesy crumble and continue grilling until cheese turns golden brown.
    4. Garnish and serve


    Final Comments


    These may also be served as a breakfast dish (with or without eggs) or a side dish for red meat such as barbecued steak!
