    Prawns and Fetta

    Recipe Introduction


    I am not a great fan of fetta but this is a good entree. Serve small serves of it before a warm wintery main.


    List of Ingredients


    • 1 onion, chopped
    • 4 tbs olive oil
    • 2 cloves garlic
    • lots of fresh (peeled) or canned tomatoes
    • 2 tbs tomato paste
    • salt (very small pinch)
    • fresh parsely
    • oregano or rigame (preferrably fresh)
    • 1 tbs sugar
    • 1/2 cup white wine (or more)
    • peeled raw prawns
    • fetta cut or broken in large pieces


    Instructions


    1. Fry onion in the oil. Cook until golden and very soft (we want mild flavour here)add 2 cloves finely chopped garlic.
    2. Stir in fresh or canned tomatoes (lots of them) with tomato paste, salt and herbs.
    3. Add some sugar, the wine and cook down into a rich tomato sauce.
    4. Into the sauce, place some peeled (raW) prawns. Cook a little. Add large pieces of fetta.
    5. Sprinkle more fresh parsly on top. Serve with crusty bread and a glass of wine.


    Final Comments


    The sauce at the end of step 3 has dozens of uses. Eat as is over pasta or steak, stir through seafood or olives and anchovies. Stir through your choice of vegetables. It is a good and versatile sauce and can be frozen
