    Recipe Introduction


    I have written vego option in this one.
    This one is able to be varied in a dozen ways. Just use your imagination.

    Serves 4 generously (I have made enough for 1-2 by making less)


    List of Ingredients


    • 1 red onion
    • 2 tomato
    • 4 cloves garlic
    • large piece ginger
    • 1 piece bok choy
    • 1 tbs tomato paste
    • 3 tbsp black bean sauce (black bean with ginger is good)
    • 1 tbs dark soy sauce
    • 1 tbs light soy sauce
    • 2 chicken breasts (or use squid or for vego omit)
    • 1-4 cubes tofu (optional, but use lots if chicken not used)
    • 500g hokkien noodles
    • large heap of beansprouts
    • lemon wedges


    Instructions


    1. Slice chicken and fry in wok until cooked, set aside. Deep fry cubes of tofu, drain and slice.
    2. Fry onion until well cooked in very hot wok (blackened slightly is good) add tomato, garlic and ginger and stir until fragrant.
    3. Add in all sauces, adding 1-2 tbs water only if needed. Please do not overdo the water.
    4. Add the bok choy and let it wilt slightly. Add in chicken and stir in noodles. Cook well so flavours combine always stirring.
    5. Stir in beansprouts and het through. add them a bit earlier if you like very collapsed ones I prefer just heated though.
    6. serve with lemon wedges.

    can include mushrooms, baby spinach or whatever takes your fancy
