    Penang Mushroom and Beef Curry

    cheat's method (ie uses jar of curry paste)


    List of Ingredients


    • 2 tbs peanut oil
    • 300g flat mushrooms, thickly sliced
    • 500g beef fillet or sirloin cut into 1 cm thick slices
    • 1/4 cup coriander leaves
    • 1/4 cup penang curry paste
    • 1/2 red capsicum, sliced
    • 300 ml coconut cream
    • 1/4 cup unsalted peanuts, roughly chopped
    • boiled rice to serve


    Instructions


    1. Heat a wok over high heat. Add I tbs oil and half the beef. Stirfry 2 min or until beef tender (remember they are small pieces and dont need long)
    2. Remove and keep warm while you use the rest of the oil and beef in the same way.
    3. Remove beef. Add curry paste to wok and fry 1 minute until aromatic. Add meat back in, stirring to coat it.
    4. Add coconut cream and mushrooms. Bring to the boil. Reduce heat to medium low and simmer for 5 minutes.
    5. Stir in capsicum and cook for 1 minute (until tender)
    6. Spoon into serving bowls. Top with coriander and peanuts. Serve with rice.
