    Satay pork steaks with noodle coleslaw

    They did not say how many it serves. I am guessing 4. I am tempted to try kangaroo or chicken instead of pork.


    List of Ingredients


    • 2 tsp peanut oil (or olive)
    • 600g pork loin steaks
    • 2 tbs bottled satay marinade (or one packet, or make your own)
    • 1/4 savoy cabbage, finely shredded
    • 4 spring onions or shallots, finely sliced
    • 1 carrot peeled and julienned (can grate)
    • 1/2 red onion, sliced very thinly
    • 75g toasted cashews or peanuts
    • 2 tbs lemon juice
    • 1 tbs yoghurt
    • 1 1/4 cup vegetable stock (from a carton is fine)
    • 100g crispy noodles
    • extra spring onions or coriander to garnish


    Instructions


    1. Heat a heavy based frypan. Lightly smear oil over pork steaks. Add them to the pan. Cook 3 minutes on each side.
    2. Brush both sides of the pork with marinade. Cook 30 seconds more on each side or until cooked to your liking. Set aside. Keep warm.
    3. Combine cabbage, spring onion, carrot, red onion, cashews, lemon juice and yoghurt in a large bowl.
    4. Heat 1/3 cup stock in large frypan until boiling. Add the noodles. Toss for 10-15 seconds or until just softened. Remove from pan, drain and add to salad. Mix well to combine.
    5. Reheat steak pan. Add the remaining stock. Boil vigorously for 3 min or until reduced and slightly thickened.
    6. Place coleslaw on serbing plates, top with steak and drizzle over reduced sauce. Serve immediately garnished with fresh herbs.

    Other veg you might like to add- shredded snow peas or cucumber, red capsicum, sprouts, finely chopped brussels sprouts, sliced mushrooms, avocado
