    Pesto Pasta

    Source of Recipe

    Recipe Introduction

this is more of a meal idea with variations than a recipe. It leep the tummy feeling warm and full.

If you can't live without meat fry a steak per person to serve with the pasta on the side. Also salad or steamed veg is an optional accompaniment.

    serves 2

    List of Ingredients

    • 300g pasta (dried is ok fresh is better) I like fettucine or ravioli
    • 1 jar of pesto (I like capsicum or sundried tomato but traditional is also good)
    • 2 tbs cream (optional)

    Instructions

    1. If the pasta is dried (normal) FOLLOW THE PACKET DIRECTIONS. If it is fresh proceed as below.
    2. Bring a large pot of water with some salt in it to the boil (ie heat it until it boils). It needs to be bigger than you would think you need.
    3. Add one drop of olive oil (optional) add in the pasta. Leave the pasta in there only until it floats (about 3 minutes) (reminder - this is only the instructions for the fresh - soft - pasta)
    4. Use a colander (Or worst case scenario lid of the saucepan) to drain out all the water, keeping the pasta in the hot saucepan.
    5. Place drained pasta back over heat and stir in cream and tablespoons of pesto until the pasta looks nicely flavoured by the pesto.

    Final Comments

Variation 1 - Slice some mushrooms, fry lightly in butter or olive oil with some pepper and stir through the pasta with the pesto and cream. Mushrooms are healthy.

variation 2 - get some fresh parmesan and grate or shave some on the top of your pasta
