    Creamy Pork fillets with green peppercor

    a lovely main for a romantic dinner for 2. Serve over creamy mashed potato with a green salad or steamed green vegetables


    List of Ingredients


    • 1/2 tbs green peppercorns
    • 2 pork fillets
    • 1/2 tbs brandy
    • 1 tbs cream
    • 1/2 tbs chopped chives
    • 1/2 tbs parsley
    • dash of white wine


    Instructions


    1. Crush half the green peppercorns and pat around pork fillets
    2. In a frying pan cook pork fillets in a small amount of butter, turning them every 2-3 minutes for a total of about 10 minutes, adding the wine after both sides are seared.
    3. Remove the pork, place on a serving dish and keep warm while making the sauce.
    4. Add brandy, cream and remaining peppercorns to pan and bring to boil for 1 min. Stir in chives and parsley and pour over pork fillets.
