    Crunchy Satay Drumsticks

    serves 4 or 8 as an entree, snack
    Serve with green salad or stirfried veg for a main


    List of Ingredients


    • 1 1/2 cups natural yoghurt
    • 1/4 cup peanut butter
    • 1 tbs curry powder
    • 8 skinless chicken drumsticks
    • 250g packet natural corn chips, crushed
    • 1/2 cup grated cheddar cheese


    Instructions


    1. Combine yoghurt, peanut butter and 1 tsp of the curry powder. Marinate drumsticks in refrigerator 15-30 minutes.
    2. Combine remaining curry powder with corn chips and cheese. Roll drumsticks in crumb. Place back in fridge 10 minutes
    3. Bake at 200C for 20-25 minutes. Serve with remaining satay mixture (if it has not touched raw chicken) and garnished with peanuts, coriander and chili- optional)
