    Fillet of Beef Stroganoff

    serves 4
    Serve on a bed of rice (or mashed potato), with steamed veggies and garnished with chives


    List of Ingredients


    • 800g beef fillet cut in 5cm strips
    • 50ml peanut oil (or olive or ghee)
    • juice of 1/2 lemon
    • 50g paprika
    • 50g swiss brown mushrooms sliced (if you cant get swiss brown use normal)
    • 100ml brandy
    • 75g shallots, finely chopped
    • 200ml sour cream
    • 75 ml white wine
    • 2 tbs chopped chives
    • 40g butter, cut in small cubes (if your religion forbids butter, leave it out)
    • salt and pepper


    Instructions


    1. Heat oil in a large pan over med flame. Season meat with salt and paprika. Brown quickly 2-3 minutes
    2. Remove from pan and set aside. Add butter, shallots, and mushrooms to the pan for a few minutes. Flambe the pan using brandy.
    3. Add wine and sour cream. Add lemon juice and heat to reduce to sauce consistancy. Return beef to pan and stir to coat with sauce.
    4. Check and adjust seasoning before serving.


    Final Comments


    I would suggest this is good for a dinner party or date. Especially if they know you got fancy enough to flambe it
