    King Henry Pork Cutlet with Apple Cider

    List of Ingredients


    • 4 King Henry pork cutlets
    • 1 tsp BBQ seasoning to taste
    • 3 apples peeled and thinly sliced
    • 1/2 cup apple cider
    • 2 tbs lemon juice
    • 1/4 cup sugar (to taste)
    • 1 tsp good quality curry powder (they vary a LOT)


    Instructions


    1. Simmer together - apples, cider, curry powder, lemon juice and sugar for about 10 minutes until soft.
    2. Brush both sides of cutleys with oil and season with barbecue seasoning. Heat heavy based non-stick pan or barbecue on medium-high.
    3. Cook cutlets 2-3 minutes each side. Turn once or twice during cooking.Avoid overcooking. Test with tongs, press for a firm but still sprinkly touch
    4. Serve with seasonal veg and relish.


    Final Comments


    Veg suggestion- panfried potatoes and green beans or salad.
    -thickness determines cooking time. When juices appear on uncooked side, turn. when juices appear on top once more turn again and rest a few minutes in a warm place before serving.
