    Minted Lamb Cutlets (and sauce)

    Serve with mashed potatoes, green beans and cherry tomatoes, or with salad and sauce in a wrap


    List of Ingredients


    • lamb cutlets (can also use loin chops or chump chops)
    • mint jelly
    • 2 tsp olive oil
    • juice of 2 oranges
    • salt and pepper


    Instructions


    1. Spread cutlets with mint jelly. Heat oil in frypan over med-high heat.
    2. Cook lamb cutlets 2-3 minutes each side.
    3. Remove from heat and rest at least 5 min before serving.
    4. Drain excess fat from pan. Add 1 1/2 tsp mint jelly and juice of 2 oranges. Simmer 2 minutes. Season and serve.
