    Quick Cook Pork Chope with Portugese Rub

    Recipe Introduction


    This is more of a meal idea than a recipe it is too too easy


    List of Ingredients


    • 4 quick cook pork chops
    • 2 tbs olive oil
    • 1 tsp portugese seasoning (can use any spice rub really)


    Instructions


    1. Brush both sides of chops with oil and season with spices.
    2. Heat heavy based non-stick pan or barbecue over a med to high heat.
    3. Cook chop one min each side. Turn once or twice during cooking.
    4. cook until springy but firm when pressed with tongs (avoid overcooking). When juices appear on uncooked side it is time to flip, when juices appear on cooked side take off heat and rest a few minutes before eating.


    Final Comments


    Serve with salad and crusty bread.

    Salad suggestion - little potatoes, parsley, red lettuce, red onion, rocket, steamed beans, asparagus, roast capsicum, chargrilled eggplant. (pick any 3-4 of those and dress with something tangy like an apple cider vinegar dressing or a mustard/citrus mayonnaise)
