    List of Ingredients


    • 1 rack ribloin pork (4-5 ribs)
    • 1 tbs lemon juice
    • 2 garlic cloves, peeled and cut into slivers
    • oil


    Instructions


    1. Preheat oven to 180C. Using a pointed knife, make slits in the thickest part of the pork and insert garlic into them.
    2. Brush surface with oil and lemon juice. Elevate pork on a rack and place onto a baking dish.
    3. Bake on top shelf of oven 180C 60 minutes per kg.
    4. It is cooked when the internal temp is 74C-76C and cooked juices run clear when pierced.
    5. Stand rack in a warm place 10 minutes before carving (rest)
