    this one seems strange, I wonder if i would dare try it. For a vegetarian version, obviously use vegetable stock instead


    List of Ingredients


    • 2 avocado pears
    • 1 1/4 oz butter
    • 1 oz flour
    • 1 1/2 pints well flavoured, jellied chicken stock
    • 1 shallot or small onion, finely chopped
    • 1 stick celery, chopped or 1/2 tsp celery seeds
    • salt and pepper
    • 2 egg yolks
    • 2-3 tbs double cream
    • pinch of nutmeg


    Instructions


    1. Melt butter, stir in flour, cook gently until straw coloured and blend in the stock.
    2. Add shallots (or onion), celery (or seeds) and seasoning and stir unti boiling. Cover pan and simmer 10 - 15 minutes. Strain liquid (I think you discard the solids)
    3. Peel avocadoes, remove stones, mash flesh with a fork and then press the pulp through a nylon strainer. Add a little of the hot soup to avocado puree.
    4. Add the puree into the pan of soup. Mix until quite smooth and bring to boil.
    5. Work egg yolks and cream in a bowl with a wooden spoon. Mix in a little of the hot soup. Add mixture to the pan and cook carefully without boiling until the soup thickens.
    6. Taste for seasoning. Add a pinch of nutmeg and serve.
