    serves about 20 unless they are very greedy
    This high fat, rich and well flavoured dessert is sooooooooooo yummy. Remember to cut the serves small.

    I am translating this recipe from Latvian and decyphering terrible handwriting so I only hope it is completely correct


    List of Ingredients


    • 1 1/2 packets coffee milk biscuits (broken into small pieces)
    • 1/2 lb unsalted butter
    • 3/4 cup powdered sugar
    • 2 eggs
    • 5 1/2 tbsp custard powder
    • 1 pint milk
    • 1/2 cup expresso or some instant coffee powder
    • blanched almonds (or blanch your own)


    Instructions


    1. Cut the almonds into long spines, or slivers. Cook them for a short time in the oven (toast them)
    2. Make the custard (with milk) very thick is ideal.
    3. Beat the butter with the castor sugar. Stirring add the eggs (one at a time).
    4. Make sure the custard cools (stir it so no skin forms. Add coffee to the custard to flavour it. Once it is all cool enough add the butter mix too.
    5. Carefully stir in the broken biscuits and form the whole mass into a hedgehog shape on a plate.
    6. Use toasted almond slivers to make spines for the hedgehog, if you like add a sultana eye.
    7. Place in the fridge until it hardens.


    Final Comments


    Not healthy but delicious with your after dinner coffee!!
