    serves about 4 I imagine. If you are as lazy as me you might use bought shortcrust pastry (did I admit that?)


    List of Ingredients


    • 3/4 cup flour
    • 1 pinch salt
    • 4 tbs butter
    • 3 tbs water
    • 6 slices bacon
    • 8 slices cheese (emmenthal is recommended)
    • 4 eggs
    • 1 cup light cream
    • grated nutmeg
    • salt and pepper


    Instructions


    1. Sift flour with salt onto pastry board or clean table top.
    2. Put butter, cut into small pieces in the centre of the flour and gradually draw in the flour with the tips of the fingers until the mixture looks like fine breadcrumbs.
    3. Add water quickly and knead dough into ball I(careful not to overwork)
    4. Wrap in wax paper, let stand in cool place (ie fridge) for 20 minutes.
    5. Roll out dough with a rolling pin to 1/4 inch thickness. Line a buttered quiche pan or shallow tart mold with it (about 8-10 inches in diameter. Pinch the edges all around.
    6. Prick the dough with a fork and leave to relax.
    7. Fry bacon in a pan until crisp. Drain it. Arrange over the dough and cover with cheese slices.
    8. Beat eggs with cream, nutmeg and salt and pepper and spoon over the cheese.
    9. Cook in a moderate (preheated) oven. 350F (240C) for about 40 minutes until set and golden
