    I felt like stroganoff, my kids felt like a rose pasta. I tried to integrate some elements from each and this is what I got.


    List of Ingredients


    • 500g lean beef steak
    • 1 onion, very finely chopped
    • 12 button mushrooms finely sliced
    • 2 tomatoes, very finely chopped
    • 2-3 cloves garlic, very finely chopped (optional)
    • dried herbs (optional) - use mixed or oregano and thyme
    • 300ml cream (I used low fat just because it was cheap)
    • 170g tin tomato paste (or 5 tbs)
    • salt and pepper
    • 3/4 cup verjuice (or use white wine)
    • 500g pasta (spirali or fettucine)
    • you could use chives or italian parsley to garnish if you like
    • olive oil


    Instructions


    1. Heat olive oil and cook steak about 4 min per side (until rare). Put it aside to rest.
    2. On low heat saute the mushrooms (add butter if you like), seasoning them with pepper. Put aside.
    3. Saute onion, garlic and tomato until translucent. Add in verjuice and let it slowly collapse and reduce until it is a thick sauce. Add in tomato paste and stir well. Add some water if needed to keep the consistency good.
    4. Cook pasta.
    5. Slice beef thinly and add into sauce with mushrooms. Let cook a few minutes while pasta is cooking. Add cream in at the very end.
    6. Drain pasta and toss it through the sauce.


    Final Comments


    makes generous serves. if you are feeding more than four you might want to serve with salad and/or bread
