    Vegetarian friendly. Cheese can be omitted and olive oil used in frying for vegans.

    I don't like parmesan. I find a little dollop of cream (while different in effect) can also work here. If not using parmesan add a pimch of salt


    List of Ingredients


    • 90g butter
    • 1/4 cup grated parmesan
    • 250g swiss brown mushrooms (sliced)
    • 2 tbs chopped fresh basil (or 1/4 tsp dried)
    • black pepper to taste
    • 1/4 cup chopped parsley
    • 250g pasta


    Instructions


    1. Melt butter in frypan. Saute mushrooms 2-3 minutes. Mix in pepper, herbs.

    2. Cook pasta in pleny of boiling water until al dente. Drain.
    3. Toss through mushroom mixture and cheese. serve immediately with crusty bread.
