    List of Ingredients


    • 500g coliban potatoes - peeled, boiled and mashed
    • 1/4 cup grated parmesan cheese
    • 1 egg yolk
    • 3/4-1 cup plain flour
    • freshly ground black pepper to taste


    Instructions


    1. Measure 2 cups mashed potato into a large bowl. Add egg yolk, parmesan and pepper. Mix until combined.
    2. Gradually add enough flour to form a slightly sticky dough. Knead adding more dough if required until a smooth dough forms.
    3. Divide dough into 4 equal portions. On a floured surface, roll each portion to form a 2cm thick sausage.
    4. Cut into 2.5cm slices and shape each into an oblong.
    5. Press oblong onto floured palm of hand with a fork. This will flatten and indent one side with a pattern.
    6. Boil gnocchi in large saucepan of boiling water for about 2 minutes (until they float to the surface)
    7. Serve with Napoletana or Bolognese sauce, or simply with basil and garlic infused extra virgin olive oil (suggestions).
