    List of Ingredients


    • 500g packet pasta (I used vegeroni large spirals)
    • 1 tbs butter
    • 1 tbs good olive oil
    • 300g veal (more if you can afford it) thinly sliced against the grain
    • 1 or more cloves finely chopped garlic
    • 1-2 shredded carrots
    • herbs of your choice (fresh or dried), stock powder or vegeta is optional here
    • salt and pepper
    • half a bottle (250 ml maybe) tomato puree
    • 1/2 glass (or less) white wine
    • 1/2- 1 cup frozen peas
    • 2 spring onions
    • 300ml cream


    Instructions


    1. Heat oil and butter in pan. Stirfry veal quickly until browned and has an appetising smell. Set aside
    2. Remove veal. Add garlic and carrot and stir quickly to soften (over low heat)
    3. Season with salt, pepper and herbs. Add tomato and wine and stirr well. Let it bubble away about 5 minutes (but not dry out too much)
    4. Cook pasta al dente
    5. Add veal and frozen peas. Stir until sauce is warm. Pour in cream and very gently warm.
    6. Drain pasta and toss in the sauce.


    Final Comments


    You may serve it with shaved parmesan or chilli flakes if you wish. Crusty bread and green salad are good partners. I liked mine with a glass of white
