Salsa Verde Pizza

List of Ingredients
- 1/3 cup extra virgin olive oil
- 3 garlic cloves, crushed
- 1/2 cup grated parmesan ( I left it out)
- 2 tsp wholegrain mustard
- 4 x 16cm pizza bases (the recipe suggested boboli brand)
- 2 anchovies (I might use more)
- 1/2 cup flat parsley leaves
- 500g button muchrooms, sliced
- 1/2 cup mint leaves
- 1/4 cup FRESH breadcrumbs
- 1 tbs capers, drained
Instructions
- Heat 1 tbs oil in large frypan over medium heat. Add w garlic cloves and the mushrooms. Cook 3-4 mins until mushrooms tender and liquid evaporates. Cool. Stir in parmesan.
- Preheat oven to 200C. Spread mustard evenly over pizzas. Top with mushroom mixture. Place on greased baking tray, cook 10-12 minutes until golden.
- Process all other ingredients together into a green, thick, fragrant mixture (salsa verde).
- Spoon salsa verde over hot pizzas and serve immediately.
