    I used this at a meal for poor people my church does on Saturday nights and it was a big, big hit. My kids love it too

    List of Ingredients




    Apricot Chicken


    (serves lots - can be frozen)

    2kg chicken pieces (cheap cuts are fine)
    3 packets french onion soup mix
    2l apricot nectar
    5 onions
    olive oil (or any oil you prefer)
    up to 6 cups mixed vegies (eg carrots, corn, capsicum, celery, broccoli) - optional
    100g dried apricots finely chopped (the chopped is v important if serving to kids)

    1. Slice onion and fry in oil. Tranfer to a large lasagne tray. Brown chicken in the same pan and add to onion.

    2. Sprinkle soup mix over chicken and pour over juice. Add in apricots and vegies (fry hard vegies first if you want but I don't always)

    3. Place in a 180C oven for a long time (maybe an hour) until it looks and smells finished.

    4. Serve with mashed potato, rice or cous-cous.
