    Italian Style Roast Chicken

    Recipe Introduction


    To call this Italian cooking is probably a huge joke. Flavours inspired by Italian cuisine rather.
    Serves 4


    List of Ingredients


    • size 14 chicken (or as desired)
    • 1 1/2 cups cooked rice (frozen precooked is fine)
    • 1/2 jar masterfoods Italian flavour base


    Instructions


    1. Preheat oven to 180C. wash chicken thoroughly inside and out.
    2. PAt dry with paper towels. Combine rice with nearly all flavour base reserving 1 tbsp.
    3. Fill cavity of chicken and truss it.
    4. Brush reserved flavour base outside chicken
    5. Place chicken on a rack over baking dish that contains a little water. Cover dish TIGHTLY with foil. Bake for 40 minutes.
    6. Remove foil. Bake a further 60 mins or so until juices run clear when chicken pierced with skewer at the thickest part of thigh.
    7. Serve with roast vegetables like pumpkin and potato or mediterranean veg.


    Final Comments


    -pumpkin and potato best cooked by parboiling then brushing with oil (and salt) and baked

    -Use different flavours out of jars if you like. Indian curry paste works quite well with roast chook too and then you serve it cold with salad and yoghurt or warm with naan bread and veg curry.
