Sunshine Fried Rice

I'd use frozen rather than tinned veg. You could use tofu and beansprouts instead of the meat.
List of Ingredients
- 1 1/2 cups shortgrain rice
- 1 3/4 cups water
- 1/4 cup diced ham
- 1/4 cup diced chicken
- 2 1/2 tsp veg oil
- 100g peeled, cooked prawn
- 450g can pineapple pieces, drained
- 440g can peas (drained)
- 440g can corn kernels (drained)
- 1 tbs soy sauce
Instructions
- Pour rice and water into a saucepan and cover tightly. Bring to the boil, reduce heat to very low and cook for 15 minutes without opening.
- Heat frypan and stirfry ham and chicken for 1 minute.
- Add prawns, pineapple, peas, corn and sauce and stir over high heat until warmed through. Add rice and mix well over heat for 2 minutes.
- Garnish with diced red capsicum, shallots and parsely (or coriander)
