instead of pork you could use beef, chicken, seafood or tofu/veg. This is a whole meal rather than a side dish (unless you having a banquet. A side of bok choy (asian greens) in oyster sauce is good or serve with a salad.

List of Ingredients
- 300g pork stirfry strips
- 1 onion, chopped
- 6 cups steamed rice (short/medium grain)
- 12 coriander leaves
- 2 tbs peanut oil
- 3 cloves garlic, crushed
- 2 eggs, beaten
- 2 ripe tomatoes, diced
- 3 spring onions, chopped
- 1 lime cut into wedges (optional garnish-nice squeezed over)
- 3 tbs fish sauce (or use mushroom sauce if vegetarian)
- 1 tbs soy sauce (can use salt reduced)
- 2 tsp brown sugar (the dark one)
- 1/3 cup (80ml) salt reduced chicken stock (or use vegetarian)
Instructions
- Mix together fish sauce, soy sauce, sugar and stock.
- Heat wok until hot. Add a drizzle of oil and make 2 thin omelettes (almost pancakes) using beaten eggs. Roughly chop omelettes.
- Stirfry garlic until fragrant. Stirfry pork in 1-2 batches for about 1 min, then remove.
- Add a little oil. Stirfry onion about 30 seconds. Add rice and stirfry until hot.
- Return pork. Add sauce mixture. Add egg, taste and season.
- Mix through tomatoes, spring onions and coriander. Serve.
Final Comments
Mix in some fried mushrooms, baby spinach, grated carrot, peas, corn for more vitamins or when serving toss through bean sprouts
