    List of Ingredients


    • 50g butter
    • 185g tuna in oil (undrained)
    • 1 onion, chopped
    • 400g can diced tomato
    • 5 1/2 cups hot chicken stock
    • 1 1/2 cups short grain rice
    • 2 tbs chopped parsley
    • 1/2 cup parmesan or romano cheese


    Instructions


    1. Melt butter in large saucepan and saute onion, rice and tuna for 2 minutes.
    2. Add tomatoes and 1 cup stock, stirring occaisionally until all liquid is absorbed.
    3. Continue to stir and gradually add stock until rice is cooked (approx 15 minutes).
    4. Stir in cheese and parsley. Garnish with shavings of cheese


    Final Comments


    easiest way to make stock is dissolve 3 stock cubes in 5 1/2 cups water. (not as nice as proper stock but still ok)
