Tuna and Tomato Risotto

List of Ingredients
- 50g butter
- 185g tuna in oil (undrained)
- 1 onion, chopped
- 400g can diced tomato
- 5 1/2 cups hot chicken stock
- 1 1/2 cups short grain rice
- 2 tbs chopped parsley
- 1/2 cup parmesan or romano cheese
Instructions
- Melt butter in large saucepan and saute onion, rice and tuna for 2 minutes.
- Add tomatoes and 1 cup stock, stirring occaisionally until all liquid is absorbed.
- Continue to stir and gradually add stock until rice is cooked (approx 15 minutes).
- Stir in cheese and parsley. Garnish with shavings of cheese
Final Comments
easiest way to make stock is dissolve 3 stock cubes in 5 1/2 cups water. (not as nice as proper stock but still ok)
