    New potato, Watercress and Peanut Salad

    Recipe Introduction


    Nice with a classy barbecue that involves things like prawns, satay or marinated meat.

    note: light olive oil is NOT low in fat. It is lighter in flavour. You can use any neutral flavour oil you like instead if you like.


    List of Ingredients


    • 500g new potatoes
    • 4 spring onions, finely sliced
    • 1 tbs red wine vinegar
    • 1/2 cup peanuts
    • 2tbs light olive oil
    • freshly ground black pepper
    • 1 bunch watercress, trimmed and sliced
    • 2 tbs peanut oil


    Instructions


    1. Boil potatoes until tender. In a jar combine oils, vinegar, pepper and peanuts. Shake to combine.
    2. Drain potatoes well. Transfer to salad bowl and while still quite hot pour dressing over.
    3. Stir and cool. Mix watercress and spring onions through the potatoes. Serve.
