    List of Ingredients


    • 750g potatoes
    • 1 tbs white vinegar
    • salt to taste
    • 1/2 cup ricotta (can use mayonnaise or yoghurt)
    • 3 tbs fresh mint leaves, chopped
    • 1 cup cooked, shelled green peas (do not overcook)


    Instructions


    1. Cook potatoes until tender. Toss with vinegar and salt.
    2. Cut potatoes into pieces. Chill them.
    3. Thin the ricotta with a tiny bit of hot water and stir through the mint.
    4. Pour dressing over the potatoes. Ass peas and season to taste. Toss well.


    Final Comments


    Boiled or roast beetroot would be a nice addition
