    This is a recipe for an entree salad for four people. To make it a main for two serve it over rocket or your favourite lettuce, using the same amounts.

    This recipe may work with yabbie (marron), Morton Bay Bugs, langoustines or similar shellfish.

    List of Ingredients




    1 ripe mango, sliced
    1 avocado, sliced
    french dressing (quality one, preferably mke your own)
    black pepper
    12 tiger prawns (or equivalent)
    olive oil
    fresh dill (or coriander)
    2 slices smoked salmon.

    Recipe



    1. Arrange mango and avocado on plates with french dressing to prevent browning.

    2. Sprinkle black pepper over prawns and fry in a hot pan with a minute amount of olive oil for 2-4 minutes.

    3. Top salad with prawns and sprinkle over fresh herb.

    4. Cut smoked slmon in hlf lengthways and roll up strip into rose shape. Garnish each salad with "rose"
