    Coleslaw: Middle eastern flavours

    List of Ingredients


    • 1/4 cabbage, shredded
    • 1/2 red onion, sliced
    • 1 smallish carrot, julienned
    • 1/2-1 lebanese cucumber, sliced (in half moons)
    • 1/2 granny smith apple, sliced
    • 1 small can chickpeas, drained (the teeny tiny cans)
    • 2 tbsp extra virgin olive oil
    • 2 tbsp tahini (I used hulled)
    • juice of 1 lemon
    • 1/2-1 tsp honey
    • lots of salt and pepper
    • paprika


    Instructions


    1. whisk together oil, tahini (sesame paste), lemon juice, honey and seasonings in a salad bowl.

    2. Add shredded/sliced/drained vegetables and mix well (using clean hands ideally but salad tossers are ok)

    3. Let flavours combine 10 minutes and serve



    Final Comments


    capsicum, snowpeas, brussels sprouts, pine nuts, dates or raisins may work in this salad if desired. Parsley, mint or coriander may also add something
