    List of Ingredients


    • 4 large potatoes, cooked
    • 1 large onion (preferably red)
    • juice of 1 large lemon
    • 1-2 tbs finely chopped parsley
    • 2-3 tbs finely chopped mint
    • 2 lebanese cucumbers, chopped
    • 1 punnet cherry tomatoes halved (or 3 large tomatoes chopped)
    • extra virgin olive oil
    • salt and pepper
    • 2 pieces pita bread (I like to use wholemeal)


    Instructions


    1. Finely chop onion and place in salad bowl with lemon juice.

    2. Place pita bread in 180C oven for 10 minutes or until hard and dry but not burnt.Set aside.

    3. Add herbs to salad bowl. chop up potatoes (preferably still hot) and add in to salad. add a drizzle of oil and salt and pepper. If not planning to eat it straight away leave it at this point for a while so potatoes soak in flavour.

    4. Chop up cucumber and add with tomatoes to the salad. Check seasoning and adjust if needed.

    5. Break pita bread into bitesized pieces (doesnt need to be even) and add to salad, toss to mix.

    6. Enjoy as a meal or hearty side dish.



    Final Comments


    dont chop things too small or even as the rustic look is part of this salad's charm. The herbs and onion however benefit from being fairly fine.

    Even though I am calling this a side salad, in my vegetarian days this used to make a lovely substantial meal so give it a go as a whole meal
