    They suggest this for kids' lunch boxes, but really who has 8 kids even if kids would eat those ingredients? Probably they are more appropriate for picnics or outdoor buffets.
    -You could make sandwiches instead of rolls if convenient
    -You could add brie walnut and maybe pear with the chicken and rocket instead of the antipasto and mayonnaise
    -you could use a good quality ham intead of the chicken


    List of Ingredients


    • 2 french sticks
    • 1 barbecued chicken
    • 1/3 cup whole egg mayonnaise (or homemade aioli)
    • 1 handful rocket
    • 200g chargrilled eggplant, sliced
    • 100g semi dried tomatoes, chopped
    • 150g chargrilled peppers, chopped


    Instructions


    1. Pull the chicken meat off the bones and tear into pieces. I like skin but you may wish to remove it.
    2. Cut french sticks along the centre (not all the way through) and open out. Spread each with mayonnaise
    3. Fill each stick with half each of the shredded chicken, rocket leaves, eggplant, semi-dried tomatoes and peppers.
    4. Cut each into 4 pieces. May be served with a little extra mayonnaise if liked
