    Recipe Introduction


    This recipe serves 8, half of each type of roll per person. It can probably be made on a smaller scale just for one or two


    List of Ingredients


    • 8 round bread rolls
    • 8 lettuce leaves
    • 4 thin slices cold roast beef, ham, salami or smoked salmon
    • 1 tbs mayonnaise
    • 1 tomato (sliced)
    • 1 avocado (diced)
    • lemon juice to taste
    • 1 cup cooked chicken (chopped)
    • 1/4 cup apricot yoghurt (or plain yoghurt and apricot jam)
    • 1 cup coleslaw
    • 1 tsp curry powder
    • 1 stalk sliced celery
    • 4 thin swiss style cheese slices


    Instructions


    1. Cut tops of rolls and hollow out centre. Place a lettuce leaf in each roll.
    2. Sprinkle avocado with lemon juice.
    3. Layer 4 of the rolls with meat, mayonnaise, cheese, tomato and avocado. Replace tops and wrap tightly in foil.
    4. Refrigerate until required.
    5. Combine chicken with yoghurt and curry. Layer in other four rolls with celery pieces and coleslaw. Store as above.
    6. Cut rolls in half before serving, makes 8 halves of each.


    Final Comments


    Might be nice on a picnic with sparklin apple juice or white wine to drink
