    serves 1. For my partner who is allergic to tomatoes I would use avocado, cucumber or roast capsicum instead or I would just omit. Most people would probably like this recipe even better with a slice of cheese (not me)

    suitable for vegetarians and can be made suitable for vegans


    List of Ingredients


    • 1 large multigrain bread roll
    • butter
    • 3 mushrooms
    • 1/4 red onion (or whatever onion you have)
    • 1/2 carrot
    • 1 roma tomato
    • home made dressing (lemon and mustard variety)
    • handful of baby spinach (can use lettuce)


    Instructions


    1. Slice onion very finely and slice mushrooms. Pour dressing over both of these! Leave at least 5 min (can leave over night or work with leftovers of a mushroom salad)
    2. Butter roll thickly enough so it wont go soggy. Add baby spinach and top with sliced tomato.
    3. Cut carrot into thin strips (shaving with a vegetable peeler works well) and top sandwich with carrot strips.
    4. Spoon mushroom salad over sandwich and serve immediately


    Final Comments


    If not serving immediately (eg if this is your picnic food) then you need to make sure the mushroom salad is drained really really well OR you need to bring the mushroom salad seperately in a small container and still spoon it on in the last minute. Noone likes a soggy roll. This roll is nice with orange or multi v juice, could also work with sparkling apple or water.
