    Almost any salad or sandwich can be adapted to a picnic. Browse a few recipes to make up your own. Other good ingredients are fresh or dried fruit and nuts, cold homemade pasties or whatever you like to eat cold.

    List of Ingredients




    lettuce leaves
    baby spinach (optional)
    cold roast chicken deboned and chopped (about 1/4 chook)
    chopped spring onion or red onion
    sliced radishes
    cashews
    dried apricots
    3tbs mayonnaise
    3 tbs sour cream
    1/2-1 tbs brandy
    salt and pepper to taste.
    rye rolls or 9grain bread
    2 crisp pears
    6 anzac biscuits/ chocolate wheatens or 2 custard tarts
    white wine or sparkling apple and 2 glasses

    Recipe



    1. It might be wiser to use this picnic near the car because some parts of it may need to be kept cool especially if it is a warm day or a long time til eating.

    2. Layer lettuce, spinach, radishes, chicken, onions, apricots and cashews in a sealed container. (note smoked trout or eel may be used instead)

    3. Mix sour cream, mayonnaise (home made is the best by far) and brandy and place in a jar that wont leak. Season as desired.

    4.Butter rolls if desired. Pack all items in an esky (ice box)and get out there.
