Mushroom and Peppercorn Sauce

Even though to my mind this sauce is best served over steak, it may be served over pasta, mashed potato or thickly sliced toast if desired!
makes about 2 cups

List of Ingredients
- 1 tbs olive oil
- 1/4 cup vegetable stock (or any complimentary stock u have-not lamb)
- 4 green shallots, thinly sliced
- 1 tbs plain flour
- 1/2 cup cream
- 400g mushroom, thinly sliced (swiss brown is nice or normal)
- 1 tbs green peppercorns, drained and roughly chopped.
Instructions
- Heat oil in large frypan over medium heat. Add green shallots and peppercorns. Cook, stirring constantly for 1 minute or until onions are soft.
- add flour and cook for 1 minute. Stir in mushrooms, stock, cream. Cook, stirring constantly for 2-3 minutes until mushrooms are tender and sauce thickens.
- Serve.
