Recipe Introduction
This is enough pesto to serve with 1 pound of linguine (or any pasta). It can also be used as a dressing on potato salad, a sandwich spread, a topping for steak or fish and in myriad other ways. Of course not all of these serving suggestions would be approved by the authors of the recipe.
List of Ingredients
- 2 1/2 cups fresh basil leaves
- 6 tbs olive oil
- 1/3 cup pinenuts (or blanched almonds)
- 3/4 cup parmesan cheese
- 3/4 tsp salt
- 3/4 tsp black pepper
Instructions
- In a blender crush up basil leaves, olive oil, pine nuts, cheese, salt and pepper. Blend until a thick sauce.
- Serve tossed through just cooked pasta or as you like.
