    Cream of Mushroom Soup

    List of Ingredients


    • 60g butter
    • 1 red onion, finely chopped
    • 2 garlic cloves, crushed
    • 1/3 cup plain flour
    • salt and pepper
    • 4 cups chicken stock (can use vegetable instead, can use salt reduced)
    • 1/2 cup light cream
    • 1/3 cup chopped flat leaf parsley (if you can only get curley use that)
    • 600g cup mushrooms, sliced


    Instructions


    1. Melt butter in large saucepan over medium high heat
    2. When butter begins to bubble, add onion and garlic. Cook stirring 3-4 minutes
    3. When onion is soft add mushrooms. Cook, stirring occaisionally, about 10 minutes until tender. Set aside 1/4 cup.
    4. Add flour to pan and cook, stirring 2 minutes. Gradually add stock. Keep stirring until it is all added.
    5. Bring to the boil stirring. Reduce to medium low and cook uncovered for 10 minutes, stirring occasionally.
    6. Process. Add cream and parseley and heat without boiling.
    7. Season to taste, ladle into bowls and top with reserved mushrooms
