Cream of Mushroom Soup

List of Ingredients
- 60g butter
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1/3 cup plain flour
- salt and pepper
- 4 cups chicken stock (can use vegetable instead, can use salt reduced)
- 1/2 cup light cream
- 1/3 cup chopped flat leaf parsley (if you can only get curley use that)
- 600g cup mushrooms, sliced
Instructions
- Melt butter in large saucepan over medium high heat
- When butter begins to bubble, add onion and garlic. Cook stirring 3-4 minutes
- When onion is soft add mushrooms. Cook, stirring occaisionally, about 10 minutes until tender. Set aside 1/4 cup.
- Add flour to pan and cook, stirring 2 minutes. Gradually add stock. Keep stirring until it is all added.
- Bring to the boil stirring. Reduce to medium low and cook uncovered for 10 minutes, stirring occasionally.
- Process. Add cream and parseley and heat without boiling.
- Season to taste, ladle into bowls and top with reserved mushrooms
