    Minted Vegetable Soup

    serves 2-3
    suitable for freezing
    can be doubled


    List of Ingredients


    • 1 tbs oil
    • 1 carrot, chopped
    • 2 cups (500ml) vegetable stock)
    • 1 small onion, chopped
    • 1 small parsnip, chopped
    • 1 tbs chopped fresh mint
    • 1 stalk celery, chopped
    • 1/4 cup split peas
    • 2 tbs cream


    Instructions


    1. Heat oil and fry onion until soft. Add celery, carrot and parsnip and fry 5 minutes.
    2. Add split peas and stock. Cover and simmer for 40 minutes. Puree soup with mint and return to pan. (or freeze)
    3. Reheat, add cream and serve hot.
