List of Ingredients
- 1 tbs oil
- 1 carrot, chopped
- 2 cups (500ml) vegetable stock)
- 1 small onion, chopped
- 1 small parsnip, chopped
- 1 tbs chopped fresh mint
- 1 stalk celery, chopped
- 1/4 cup split peas
- 2 tbs cream
Instructions
- Heat oil and fry onion until soft. Add celery, carrot and parsnip and fry 5 minutes.
- Add split peas and stock. Cover and simmer for 40 minutes. Puree soup with mint and return to pan. (or freeze)
- Reheat, add cream and serve hot.
