    serves 10-12
    preparation: 5 minutes
    cook: 30 minutes


    List of Ingredients


    • 3 white onions, chopped
    • 3 1/2 cups chicken stock
    • 1.5kg peeled, seeded, cubed pumpkin
    • pinch nutmeg (optional)
    • 1 1/2-2 cups milk
    • chopped parsley


    Instructions


    1. Place onion, stock and pumpkin in a large saucepan.
    2. Bring to the boil, cover and simmer until tender (about 15 minutes). Cool for about 10 minutes.
    3. Puree in a blender or food processor until smooth.
    4. Return to saucepan, add nutmeg and milk. Reheat gently and adjust consistency with extra milk if necessary.
    5. Serve sprinkled with parsley.


    Final Comments


    Sometimes I saute the onion and pumpkin first but this recipe is lower in fat.
