    Tropical Coconut Pumpkin Bisque

    List of Ingredients


    • 1 tbs oil or butter
    • 500ml water
    • salt and pepper
    • 2 cloves garlic
    • 1 lge, finely chopped onion
    • 1 green chilli deseeded and finely chopped
    • 1 tbs fresh ginger, finely chopped
    • 750g pumpkin, deseeded and peeled
    • fresh corainder or mint for garnish
    • 1 1/2 cup coconut cream


    Instructions


    1. Dice and peel the pumpkin. Warm butter in a large, heavy pot.
    2. Cook onions, chillis,green ginger and garlic gently until onion is translucent. Add diced pumpkin and water.
    3. Simmer about 1/2 hour until pumpkin very tender. Puree in a blender/food processor.
    4. Return to pot and reheat. Season and add coconut cream.
    5. Serve hot or chilled with fresh coriander or mint leaves.
