Pork and Noodle Stirfry with mushrooms

List of Ingredients
- 300g fresh hokkien noodles
- 2 tbs peanut oil
- 1 onion, cut into thin wedges
- 300g pork fillet, trimmed and finely sliced
- 2 tbs hoi sin sauce
- 2 tbs sweet chilli sauce
- 1 bunch baby bok choy, chopped
- 300g cup mushrooms, halved
Instructions
- combine pork, 2 tsp oil, hoisin and sweet chilli sauce in a medium bowl. Cover and refrigerate 10 minutes.
- Place noodles in a heatproof bowl. Cover with boiling water and let stand for 5 minutes. Drain. Keep warm.
- Heat a wok over high heat. Add 2 tsp oil and half the pork. Stirfry for 2-3 minutes until pork is tender.
- Remove and keep warm. Repeat with other half of meat.
- Heat remaining 2 tsp oil in wok. Add onion. Stirfry 1 minute until tender. Add chopped bolbs of bok choy reserving leaves for later. Stirfry 1 minute.
- Add noodles. Stirfry 2-3 minute until noodles are hot. Add mushrooms, pork and reserves bok choy leaves. Stirfry 2-3 minutes until pork is heated through.
- Serve immediately (I might add extra sauce at this point or squeeze in some lemon or throw in some crushed nuts.)
