Stirfry Pork and Vegetables

Recipe Introduction
Obviously vary the vegetables as desired. My mum would have used the ones in the recipe but also perhaps onion, beans, cabbage, spinach, cashews and maybe capsicum.

List of Ingredients
- 300g pork strips or leg steaks cut into strips
- 1/2 cup beansprouts
- 2 tbs cooking oil (peanut, sunflower, sesame or olive)
- 2 garlic cloves, crushed
- 1/2 cup celery, sliced diagonally
- 1/2 cup carrot, sliced diagonally
- 1/2 cup onion, diced
- 1/2 cup button mushrooms, sliced
- 20ml light soy sauce
- 1/2 cup snowpeas (topped and tailed)
- 1/4 cup bamboo shoots, sliced
- 1 chicken stock cube, crumbled
- 1 cup cooked brown rice
Instructions
- In a wok (or pan if need be) heat half oil, add pork and cook until it changes colour. Remove from pan.
- Add rest of oil to pan. Add onion and garlic and stirfry 2 minutes.
- Add celery and carrot and stirfry 4 minutes. Add remaining ingredients and stirfry for a further 5 minutes.
- Return pork to wok, stir and warm through. Serve with cooked rice.
